IMG_0471I am left with ripe bananas and choclate chips which are chhoo sweet to make sugar free cookies …treat!

  • 3 large, ripe bananas, well mashed ( substitute with apple-cinnamon muffin mix)
  • 1 t vanilla extract
  • 1/4 C olive oil
  • 2 C oat meal
  • 2/3 C almond meal
  • 1/3 C coconut
  • 1/2 t cinnamon
  • 1/2 t fine grain sea salt
  • 1 t baking powder
  • 6 – 7 ounces chocolate chips or dark chocolate bar chopped (or both)

In a large bowl combine the bananas, vanilla extract, and oilve oil. Set aside.
In another bowl whisk together the oats, almond meal, shredded coconut, cinnamon, salt, and baking powder.
Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks/chips.
The dough is a bit looser than a standard cookie dough, don’t worry about it.
Drop dollops of the dough in circle shape, each about 2 teaspoons in size, an inch apart, onto a parchment paper lined baking sheet. Bake for 12 – 14 minutes.

This is my favorite thing to do with the overly ripe spotted ones!

Recipe borrowed from Kondala Rao Dhulipudi.

  • ½ cup Vegetable Oil
  • 1 cup Sugar
  • 2 beaten Eggs
  • 3 Bananas ( mashed to a pulp )
  • 2 cups (Plain) Flour
  • 1 teaspoon  Baking Soda         
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 3 tablespoons Milk
  • 2 tablespoons  Lemon or Lime juice
  • ½ teaspoon Vanilla extract
  • ½ cup  Chopped Nuts **OPTIONAL ( dredged in ¼ cup of the flour )

Mix first 3 ingredients together well.  Add milk, juice, and vanilla.
Sift flour, soda, baking powder, and salt together.
Save about ¼ cup of flour mixture to dredge nuts ( if you add nuts ) – this deeps the nuts from sinking to the bottom.
Add flour mixture and mix only until flour mixture is moistened.
Add bananas and dredged nuts with flour used to dredge them.
Mix gently and pour into greased loaf pan.
Bake at 350 degrees for about 1 hour.  Test with toothpick for doneness.
